Three years ago, Damaris and Thomas Weber made their dream come true and opened Austria’s first organic mustard factory in a former grocery shop in the Josef-Gapp-Straße in Telfs.

Damaris Weber puts it in a nutshell: “With our mustard creations,
we have our finger on the pulse of the times and have
taken the hearts and palates of the Tyrolean people by storm.
Especially in times like these, people want to know where their
food comes from and how it is produced.” And anyone who
visits the organic mustard factory recognises at first glance:

Millstone made to measure

The centrepiece is the custom-made mustard mill. It weighs 750 kilograms. “The granite millstone alone weighs half a
tonne,” Thomas Weber, who has been intensively involved with mustard for fifteen years, tells us. “Our mustard is 100%
manually cold-ground and only biological ingredients are used in the processing. It goes without saying that the mustard
creations produced here are completely free of artificial additives and colourings.

A wide range of varieties

The current bestsellers in the wide range are the mild honey mustard, the hearty beer mustard and the tasty horseradish
mustard, not forgetting the “black mustard”. Insider tips include the chocolate chilli mustard, the apricot mustard and
the popular barbecue mustard. Of course, all the recipes come from Thomas Weber personally.

Visits by appointment

Austria’s first organic mustard factory can be visited by appointment-  including a mustard tasting. The mustard creations can also be tasted at the buffet at Hotel Riml in Hochgurgl.
