TYROLEAN GRÖSTL

Chef at the Hotel Riml in Hochgurgl, has the Tyrolean Gröstl recipe for you to try. So you can enjoy a piece of Austria even after your holiday!

Tip:  For the cooked beef you can use either boiled fillet
of beef or shin meat. The preparation is simple: pieces
of celery, onion, carrots, leek, bay leaves, peppercorns, 2
marrow bones (roast beforehand), heat a pot, put the meat
into boiling water, bring to boil once, season with salt and
nutmeg and simmer for 4 hours on the cooker at low heat.
You can enjoy the soup the next day.

HOW TO MAKE IT REALLY TASTY

1. Cut the onion into small cubes and fry in butter in a large pan. Add the bacon and the cooked beef and also fry.
2. Slice the potatoes and put it in the pan. Roast everything well together and season with salt and caraway seeds.
3. Fry the eggs in butter in a second pan to make fried eggs. Serve the Tyrolean Gröstl with the fried eggs and chopped chives. Serve with a green salad.
